Wash the soya chunks and soak in hot water for 15 minutes. Then drain and squeeze out all the water. Or cook soya chunks as per instructions given in the packet.Cut it into 2-4 pieces. If you are using small soya nuggets (as I have used here) cook it as whole.Heat oil in a pan. Add mustard seeds and let it splutter. Then add cumin seeds.Add ginger garlic, green chillies, onion and capsicum . Add tomato and salt, turmeric powder, chilly powder.Sauté till the raw smell goes away. Add vegetable masala powder and cook on medium flame till tomatoes are done. Now add soya chunks and mix thoroughly. Cover and cook on medium flame for 15 minutes. Keeping the flame low add in the grated coconut and mix well. Switch off. Serve hot with rice.

*Coconut oil gives the best flavour to the dish, if not available use any refined oil.
