Aloo Bonda Recipe

Bonds is a typical South Indian snack . There are many sweet and spicy version of this snack in different region, like mixed vegetable Bonda of Udupi; flour and curd Bonda is a delicacy of Mangalore.

This is the recipe of Bonda made with spicy potato filling and dipped in besan flour.

Serves: 6 Prep Time: 35 Minutes Cooking Time: 10 Minutes

Ingredients

For Filling Potato – 3 Onion – 1 Green chilli – 2 Ginger, finely chopped – 1 tsp Turmeric – 1/8 tsp For Seasoning Salt – As needed Oil – 2 tsp Mustard – 3/4 tsp Urad dal – 1 tsp Curry leaves – Few For Batter Besan flour – 1/2 cup Rice flour – 2 tbsp Hing/Asafoetida – 3 pinches Turmeric – 2 pinches Cooking soda – 2 pinches Salt – As needed  

Instructions

  1. Pressure cook potatoes for 3 whistles. Allow it to cool down and peel off the skin  and mash it well. Keep aside.
  2. Heat oil in a kadai add mustard, as it splutter add urad dal and curry leaves. Add in finely chopped ginger, green chilli and onion. Fry till transparent without changing colour.
  3. Now add the mashed potatoes with turmeric powder and salt.Mix well. Cook in low flame for 2-3 minutes. Transfer to a plate and allow it to cool down. Make equal sized balls.
  4. In a bowl, mix besan flour, rice flour, hing, turmeric powder, salt with little water to make a batter of thick consistency.
  5. Heat oil in a kadai and dip each potato balls in besan flour and deep fry.
